Cannabis Infused Key Lime Pie Recipe

To celebrate National Pie Day on January 23rd, we are going to teach you how to make your own cannabis infused key lime pie! Feel free to adjust the recipe however needed.  Happy cooking and happy National Pie Day! Enjoy 🥧

Crust:

Filling:

  • 1 can (14 oz) sweetened condensed milk
  • 4 large egg yolks
  • ½ cup fresh key lime juice (about 15-20 key limes)
  • 1 tablespoon lime zest
  • Optional cannabis infusion options:

Whipped Topping:

  • 1 cup heavy cream
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • Optional: Infuse with cannabis tincture (1-2 drops) or agave for an extra twist!

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Make the Crust:
  1. In a mixing bowl, combine graham cracker crumbs, sugar, and a pinch of salt.
  2. Melt the cannabutter or warm cannabis-infused olive oil slightly and mix it into the crumb mixture until well blended. (Only if you are infusing this part)
  3. Press the mixture into the bottom and sides of a 9-inch pie dish.
  4. Bake for 10 minutes, then remove and allow to cool slightly while preparing the filling.
  5. Make the Filling:
  1. In a large mixing bowl, whisk together the sweetened condensed milk and egg yolks.
  2. Slowly add in the key lime juice and zest, whisking until smooth.
  3. For the cannabis infusion:
  4. Pour the filling into the prepared crust.
  5. Bake the Pie: Bake at 350°F for about 15 minutes, or until the filling is just set and slightly firm to the touch.
  6. Make the Whipped Topping:
  1. Using a hand mixer or whisk, whip the heavy cream, sugar, and vanilla extract until soft peaks form.
  2. Optional: Infuse your whipped cream with 1-2 drops of cannabis tincture or a drizzle of cannabis-infused agave for an extra layer of flavor and effect.
  3. Cool and Serve:
  1. Let the pie cool at room temperature for 30 minutes, then refrigerate for at least 2 hours or until completely set.
  2. Before serving, top with the infused whipped cream and garnish with lime zest.
