Servings: 2-3

Prep Time: 10 minutes

Cook Time: 8-12 minutes

Cook pasta 8-9 minutes for al dente, or 10–12 minutes for a softer bite.

Ingredients

  • 2 cups fresh basil leaves (packed)
  • 2 tablespoons pine nuts (or walnuts)
  • 2-3 garlic cloves
  • ½ cup grated parmesan cheese
  • ½ cup infused olive oil*
  • Juice of ½ lemon
  • Salt and pepper, to taste
  • 8 oz pasta (linguine, penne, or your favorite shape)
  • Optional toppings: cherry tomatoes, grilled chicken, or roasted veggies

Instructions

  1. Boil the pasta
Bring a pot of salted water to a boil. Cook pasta for 8-9 minutes for al dente, or 10-12 minutes if you prefer it softer. Before draining, reserve ½ cup of the pasta water to help blend your sauce.
  2. Make the pesto
In a food processor or blender, combine basil, nuts, garlic, parmesan, lemon juice, and a pinch of salt and pepper. Pulse a few times until everything is roughly chopped. Then, slowly stream in the infused olive oil while blending until smooth and creamy.
  3. Toss and combine
Drain the pasta and return it to the pot or a large bowl. Add your pesto and a splash of the reserved pasta water to loosen the sauce if needed. Toss everything until evenly coated.
  4. Serve and top
Taste and adjust seasoning as needed. Serve warm and top with cherry tomatoes, grilled protein, extra cheese, or keep it simple and classic.

 Pro Tips:

This dish pairs beautifully with a crisp sparkling water or a calming tea if you’re winding down for the night.

Store leftover pesto in a sealed jar in the fridge for up to a week, or freeze in an ice cube tray for future quick meals.
