Cannabis Infused Baked Mac & Cheese

Indulge the Holiday Season with Cannablis-Infused Baked Mac & Cheese

Ingredients

  • 1 lb. dried elbow pasta
  • 1/2 cup unsalted butter
  • 1/2 cup all purpose flour
  • 1 1/2 cups whole milk
  • 2 1/2 cups half and half
  • 4 cups shredded medium cheddar cheese divided (measured after shredding)
  • 2 cups shredded Gruyere cheese divided (measured after shredding)
  • 1/2 Tbsp. salt
  • 1/2 tsp. black pepper
  • 1/4 tsp. Paprika
  • 1 serving of your preferred cannabutter or tincture (adjust dose to personal preference)

Prep Your Pasta:

Bring a large pot of salted water to a boil. Add elbow pasta and cook for 1 minute less than package directions for al dente. Drain pasta and toss with the cannabutter to make sure the pasta doesn’t stick. Coat the 9×13 baking dish with a bit of melted butter to create a non-stick coating.

Create a Creamy Sauce

Melt butter in a large saucepan over medium heat. Whisk in flour until combined. Cook for approximately 1 minute, whisking often. Gradually whisk in half-and-half and whole milk until smooth. Stir in garlic powder, onion powder, red pepper flakes, salt, and pepper. Bring to a simmer, whisking constantly, until thickened. Look for the consistency of wet sand.

 

Assemble the Cheese-alicious Dish

Preheat oven to 350°F (175°C). In a large bowl, toss together cooked pasta with half of the cheese sauce and 1 1/2 cups of medium cheddar and gruyere cheese. Place half of the cheesy pasta mixture in a 9×13 inch baking dish and spread it all along the bottom. Top with a layer of the remaining 1 1/2 cups of medium cheddar and gruyere cheese. Spread the remaining pasta cheesy mix on top. Sprinkle the top with the remaining cheese.

Bake to Perfection

Bake for 30-35 minutes, or until the cheesy top is bubbly and golden brown. Let cool for a few minutes before serving.

Notes for Dosing:

  • Adjust the amount of tincture or cannabutter based on the desired potency. If serving to multiple people, start with a conservative dose for safety.

  • For a richer flavor, consider using a combination of cheeses, such as cheddar, Gruyère, or fontina.
